Referencial da casa para espumantes, o Pizzato Brut Branco Tradicional vem sendo elaborado desde 2006, sempre pelo método tradicional e com colheita designada.
Para um pequeno lote da colheita 2012, amadurecido sobre as borras por mais de 30 meses, foi decidido apresentar um espumante na forma “bruta”, sem a retirada das borras e sem dosagem pós-dégorgement. Nasceu assim a primeira edição do Vertigo, destaque da primeira participação dos vinhos brasileiros no Guia Descorchados.
A proposta desse espumante é: o apreciador de espumantes amadurecidos sobre as borras (sur lattes), pode decidir quanto tempo o vinho ainda vai passar amadurecendo em tal estado, tomando a decisão de finalizá-lo segundo sua programação particular. Seria algo como levar para casa o processo de amadurecimento e a decisão de dégorgement.

The suggested drinking temperature range is 4 – 7 oC (39 – 45 oF).

The whole bunch grapes were direct-pneumatic pressed. Then wine was cold clarified and fermented with very low temperatures to retain floral and fruit characters for 13 days. All the wines (grapes) were processed separately.
The final base wine was blended (assemblage), cold stabilization, filtration and yeast inoculation for second fermentation. Prise de mousse on the bottle (traditional/classic method). After second fermentation, a few months of sur lattes time before manual disgorging.
In small lots in order to have more sur lattes time by the end. Manual operated, bottle by bottle.
From the same vineyard that produced the grapes for Pizzato Merlot 1999 (the wine that raised Merlot to an outstanding position in the Brazilian red winemaking industry), PIZZATO presents this very exclusive Merlot, made only in vintages with excellent growing conditions. The old vineyard low yield and good extraction winemaking result in a wine with very good ageing potential.
Concentus, from Latin, means harmony, concert, agreement. This wine embodies the enological art of mixing different varietals (grapes, wines) with the purpose of producing higher-class wines. It is a blend of Merlot, Tannat and Cabernet Sauvignon, all grown within the Vale dos Vinhedos and used in different percentages in each harvest.
